One of Spain's best-kept secrets is Iberico Pork Secreto ( also known as “the Butcher’s Secret)! Iberico Secreto is a darkly colored shoulder cut with a long grain that appears striped due to the thick intramuscular marbling. It is a marvelously sensitive and highly appreciated cut. 

The incision that surrounds the ribs from the outside is known as Abanico. It's a thin slice with a lot of marbling, so it's excellent for BBQ since it's flavorful, succulent, and crisp. The name of this cut of meat stems from its shape, which resembles that of a hand. Pork Abanico can be eaten whole, cut into fillets, or diced.
